New F&B Director

As the Cinnamon Grand’s newest Director F&B and a seasoned world chef, Justin Dingle plans to make his mark in Sri Lanka with his unique culinary style and his wealth of knowledge and expertise in the F&B division. The Director F&B position is a challenging job, but Dingle weathers it with his friendly demeanour and cheery personality.
Dingle was born and raised in Hong Kong (HK) and studied in Australia. His greatest passion was baseball, in which he enjoyed world renown as a pitcher in the Asian leagues. Tragically, he suffered a torn rotator cuff which ended his baseball career. Subsequently, he took up a cooking apprenticeship and it all skyrocketed from there.
Dingle started working with several Michelin restaurants in UK before moving on to an Executive Chef position at the Grand Mirage Resort, Bali. He has worked worldwide in premier establishments such as the Aman, New Delhi, Amanbagh, Rajasthan, and American Clubs, HK. Dingle says that his love for food had been fostered from a young age, considering HK’s food oriented culture. He believes that F&B is constantly evolving and sees a current shift in trends from European cuisine to South African, Australian and Asian cuisines.
Dingle opines that his greatest F&B strength is developing staff, projects and operations. However, he was also a celebrated chef before he joined F&B, winning the Best Restaurant Award in India for a Mediterranean restaurant. He has great skill in achieving exquisite tastes from combinations that may look bizarre on paper, but taste absolutely amazing.
Dingle’s experience and attitude herald a new era for Cinnamon Grand’s F&B department. Look forward to some unique promotions in the coming months.
